How to Convert Volume Units
A UK pint is 20% bigger than a US pint. A UK fluid ounce is 4% smaller than a US one. Both facts are true at the same time, and here's why.
The problem isn't the arithmetic
Converting volume is easy. Knowing which pint you were given is the hard part.
The US and Imperial systems use the same words — pint, quart, gallon, fluid ounce — for units that are not the same size. Nothing in a recipe or a spec sheet warns you which one is meant, and the numbers stay plausible either way.

The pint gap is 20%

An Imperial pint is about 20% larger than a US pint.
On a drink that's a bonus. In a batter, a custard or a bread dough it's a fifth more liquid than the recipe intended, which is comfortably enough to ruin it. The same 20% gap runs through Gallons (US) at 3.785411784 L against Gallons (Imperial) at 4.54609 L — which is also why US and UK fuel-economy figures can't be compared directly.
But the fluid ounce gap runs the other way
Here's the part that catches people who already know about the pint:

The US fluid ounce is about 4% larger.
So the bigger pint is made of smaller ounces. It isn't a contradiction — it's the count:
- A US pint is 16 US fluid ounces
- An Imperial pint is 20 Imperial fluid ounces
Twenty of the smaller ones still beat sixteen of the larger ones. Knowing that the direction reverses is what stops you "correcting" a conversion the wrong way and doubling the error instead of removing it.
The US cooking ladder is exact
Within the US system the cooking units are clean fractions of each other, and these hold precisely rather than approximately:
- 1 cup = 8 fluid ounces
- 1 fluid ounce = 2 tablespoons
- 1 tablespoon = 3 teaspoons
Which makes 1 cup exactly 16 tablespoons and exactly 48 teaspoons. Worth memorising — they never need a calculator, and they're the conversions you actually reach for mid-recipe.
Going up: Quarts (US) are 2 pints, and a gallon is 4 quarts, 8 pints or 16 cups.
Two things break the ladder. An Australian tablespoon is 20 mL, not 14.8 — four teaspoons, not three. And a metric cup is 250 mL against the US cup's 236.588. Both are close enough to look right and far enough to matter in baking.
A fluid ounce is not an ounce
A fluid ounce measures volume. An ounce measures weight. They're different quantities that share half a name, and they line up only for something with roughly the density of water.
The giveaway in a recipe is usually what's being measured — liquids in fluid ounces, solids in ounces. But when a recipe offers a weight, take it. Volume depends on how tightly the ingredient was packed: a cup of flour can vary by around 20% between one that was scooped and one that was spooned in and levelled. A gram is a gram regardless of technique, and weighing sidesteps every US-versus-Imperial question at the same time.
A pint of berries is a different pint
The US system also has a dry measure for produce. A US dry pint is about 550.6 mL against the liquid pint's 473.2 — roughly 16% bigger.
So a punnet of blueberries sold as a pint is not the same size as a pint of milk. It's deliberately left out of the converter above, because a third unit called a pint in the same dropdown is a reliable way to be out by a sixth without noticing. If a source is measuring berries, grain or produce by the pint, it's probably the dry one.
The conversions themselves are exact
Everything above is definition rather than measurement:
- The US liquid gallon is defined as exactly 231 cubic inches. With the inch fixed at exactly 25.4 mm, that's exactly 3.785411784 litres.
- The Imperial gallon is defined as exactly 4.54609 litres.
- A litre is exactly 1000 cubic centimetres, so Millilitres and cubic centimetres are the same thing.
Every smaller unit is a fixed fraction of its gallon. So the conversion adds no error of its own — if the answer is imprecise, the imprecision came in with your own figure, or with not knowing which system the recipe was written in.
