How this is calculated

THE SHELF PRICE IS NOT THE COST OF THE FOOD. Two things sit between them, and both usually get ignored. ⚠️ THE FIRST IS WASTE. Bone, skin, peel, trim, stalks, the outer leaves and whatever goes off before you get to it are all paid for and none of it is eaten. A pack that is 30% bone costs 43% more per edible gram than the label price suggests - not 30%, because you are dividing by the smaller number. That direction catches people out: removing 30% of the weight raises the cost of the rest by 1 ÷ 0.7, which is 1.43. The tool shows the cost with and without waste side by side so the size of the gap is visible. THE SECOND IS THE PART YOU DO NOT USE. Buying a bigger pack lowers the cost per serving only if you eat all of it. The tool reports what you SPEND and what you USE as separate figures, because the difference between them is the honest test of whether bulk was actually cheaper. A large pack at a lower unit price that half rots is more expensive than a small pack at a higher one. ⚠️ THE WASTE PERCENTAGE IS AN INPUT, AND IT SHOULD BE YOUR OWN. Published yield figures for the same ingredient vary widely, because they depend on the cut, the grade, the season and how carefully you trim. There is no honest single number for "how much of a chicken is meat". THE RELIABLE WAY TO GET YOURS: weigh the package, prepare it as you normally would, weigh what you actually cooked, and the difference is your waste. Do it once for the things you buy often and the figure is good for years. WORK IN ONE UNIT. Grams throughout is easiest, but the arithmetic does not care as long as the package weight and the serving size are in the SAME unit - millilitres for liquids, or a plain count for eggs and rolls. Mixing units here is the main way this calculation goes wrong. COST PER 100 UNITS IS THE FIGURE FOR COMPARING SHELVES. Unit pricing on a supermarket label is calculated on the package weight, not on the edible weight, so it systematically flatters anything with a lot of waste - a bone-in cut always looks better on the shelf label than it is. Comparing on edible weight is the comparison that actually decides which is cheaper. THIS COUNTS ONE INGREDIENT AT A TIME. A whole meal is the sum of several runs, plus the small constant of oil, salt and seasoning that is rarely worth costing. It also ignores the energy used to cook and the value of your time, both of which are real and neither of which belongs in a grocery comparison.

Why is the gap bigger than the waste percentage?
Because you are dividing by a smaller number, not subtracting from a bigger one. If 30% of a package is bone, the edible part is 70% of the weight but carries 100% of the price - so the cost per edible gram is 1 divided by 0.7, which is 1.43. That is a 43% increase, not a 30% one. The effect accelerates: at 50% waste the cost doubles, and at 75% it quadruples. This is the single most useful thing to understand about food pricing, and it is why bone-in and boneless cuts can cost the same per edible gram despite very different shelf prices.
How do I find the waste percentage for something?
Weigh it. Weigh the package as it comes, prepare it exactly as you normally would, then weigh what you actually cooked - the difference over the original weight is your waste. Published yield figures for the same ingredient vary widely because they depend on the cut, the grade, the season and how carefully somebody trims, so there is no honest single number to publish. Doing it once for the five or six things you buy regularly takes an afternoon and the figures stay good for years.
Why are 'what you spend' and 'what you use' different?
Because you buy whole packages and you rarely need a whole number of them. If four servings need 0.48 of a package, you still buy one. The difference between the two figures is food you now have and have not used, and whether that is a saving or a loss depends entirely on whether you eat it. Keeping them separate is the honest way to answer 'is the big pack cheaper', because the big pack is only cheaper if the leftover gets eaten rather than thrown out - at which point its cost per serving is worse than the small pack's.
Does this match the unit price on the shelf label?
No, and that is deliberate. A supermarket's unit price is calculated on the PACKAGE weight, which means it systematically flatters anything with bone, peel, shell or heavy trim - a bone-in cut always looks better on the shelf label than it works out in the pan. Comparing on edible weight is the comparison that actually decides which is cheaper. Where there is no waste the two figures agree exactly, which is a useful check that you have entered things correctly.
What units should I use?
Whatever you like, as long as the package weight and the serving size are the SAME unit. Grams are easiest for solids and millilitres for liquids, but a plain count works fine too - a dozen eggs is a package of 12 with a serving size of 2. Mixing units is the main way this calculation goes wrong, and it goes wrong quietly because the answer still looks like a plausible price. The currency is shown as dollars but nothing here is currency-specific.
Should I include the cost of cooking it?
Not in this calculation. Energy costs are real but small per meal and vary enormously by appliance and tariff, and your time is real but is not a grocery cost - folding either in makes the comparison between two packages harder rather than easier. If you want to account for them, do it once at the level of a whole meal rather than per ingredient. The same goes for oil, salt and seasoning, which are rarely worth costing individually.
How do I cost a whole meal?
Run each significant ingredient through separately and add the per-serving figures. In practice two or three ingredients usually account for most of the cost of a meal - the protein and anything out of season - and the rest rounds to noise. It is worth doing properly once for the meals you cook often, because the result tends to be surprising in both directions, and it identifies the one substitution that changes the number rather than the five that do not.
