Meat loses roughly 25-30% of its weight in cooking - water and rendered fat - so a 6 ounce cooked portion starts life as about 8 ounces raw. The calculator asks what percentage survives (72% by default, the middle of that range) and reports the shrinkage as its own figure, because seeing that you are about to lose nearly nine pounds of a thirty-one pound purchase is the part people do not picture. A STANDARD ADULT PORTION IS 6-8 OUNCES OF COOKED PROTEIN. Six is a sensible default for a buffet with substantial sides; eight is right for a meat-led menu or a hungry crowd. This is a planning range rather than a measurement, and it is an input for that reason. ⚠️ A SECOND MAIN DISH DOES NOT MEAN HALF AS MUCH OF EACH. This is the other estimate-breaker. The usual planning range is one to one and a half drinks per person per HOUR, and the first hour always runs higher than the rest as people arrive and are handed something. A three hour party for fifty is well over two hundred servings, which is a different shopping trip from what most people picture when they think about fifty guests. BONE CHANGES EVERYTHING AND IS NOT IN THE MODEL. These figures are for boneless meat. Bone-in cuts can be 20-40% bone and waste depending on the cut, and that comes off the top BEFORE the cooking loss does. If you are buying bone-in, raise the portion figure or work out your own yield - do not simply buy the same weight. FOOD SAFETY OUTLASTS THE PARTY. Cooked food should not sit in the danger zone for more than two hours in total, and one hour if it is above 90F outside. Plan how food gets COLD again, not only how it gets hot - that is what decides whether the leftovers are worth keeping.
