How this is calculated

A brew ratio of 1:16 means one gram of coffee for every sixteen grams of water. The coffee figure is simply the water divided by that number, so a stronger ratio like 1:14 gives you more coffee for the same water and a weaker one like 1:18 gives less. The water is entered in fluid ounces because that is how carafes and kettles are usually marked, and converted using the exact definition of a US fluid ounce: 29.5735 millilitres. Note that the 'cup' marked on a drip coffee maker is very often 5 fluid ounces rather than 8 - check the carafe against a measuring jug once, because a 12-cup machine holding 60 ounces rather than 96 changes the answer by more than any ratio adjustment would. Millilitres and grams of water show the same number. That is not a mistake: one millilitre of water weighs almost exactly one gram, which is why recipes can treat volume and weight as interchangeable for water and for nothing else. At brewing temperatures water is very slightly lighter than that, by well under half a percent - far less than the error in a level scoop. The coffee weight is converted to ounces using the exact definition of 28.3495 grams to the ounce. That is an ounce of WEIGHT, not the fluid ounce used for the water - the two are different units that share a name, which is one more reason a scale beats a scoop. This is the water you put IN. What you pour out is less, because the grounds keep hold of roughly twice their own weight in water. That retained amount is not modelled here - it varies with grind, brew method and how hard the bed is pressed - so if you need an exact volume in the pot, brew a little extra.

Common questions

What ratio should I start at?
1:16. Nearly every brewing guide puts the usable range between about 1:15 and 1:17, and 1:16 sits in the middle of it. Brew that twice so you know what it tastes like, then move in half steps - to 1:15 if it tastes thin and watery, to 1:17 if it tastes heavy or bitter. Changing one thing at a time is the only way to learn what you actually like.
Do I really need a scale?
If you want the same cup twice, yes. A level scoop of coffee can vary by a third depending on grind size, roast level and how it settles - dark roasts are less dense than light ones, so the same scoop is meaningfully less coffee. That variation is far bigger than the difference between 1:15 and 1:17, which means without a scale you are not really choosing a ratio at all. A cheap kitchen scale is the single biggest upgrade to home coffee, ahead of any grinder or brewer.
Why does my coffee maker's 'cup' not match?
Because it is very often 5 fluid ounces, not 8 - a convention left over from older machines and not standardised between manufacturers. A '12 cup' carafe may hold 60 ounces rather than 96. Fill yours to the top mark once, pour it into a measuring jug, and use the real number here. This catches more people than any ratio question.
Why is the water the same in grams and millilitres?
Because one millilitre of water weighs essentially one gram - that is how the metric system was built. It is true for water and not for anything else, which is why you can measure water either way but must weigh the coffee. At brew temperature the water is a fraction lighter, by well under half a percent, which is smaller than the error in reading the scale.
Does the ratio change by brewing method?
The starting point moves a little. French press and pour-over both live comfortably around 1:15 to 1:17. Cold brew is a different drink and uses far more coffee, commonly 1:5 to 1:8, because it is brewed as a concentrate and diluted afterwards - outside the range of this calculator on purpose. Espresso is measured differently again, by dose and yield rather than a brew ratio like this.
Why do I get less out than I put in?
The grounds keep roughly twice their own weight in water, and it never comes out. That is not modelled here because it shifts with grind, method and how hard the bed is pressed. If you need an exact amount in the pot - filling a flask, or serving a set number of cups - brew a couple of ounces more than the arithmetic says.
