Coffee to Water Ratio: How Much Coffee Do I Actually Need?
Start at 1:16 — one gram of coffee to sixteen of water. The bigger problem: a scoop is not a measurement, which is why yours varies every morning.

If your coffee is great on Tuesday and bitter on Wednesday with the same beans and the same machine, the variable almost certainly isn't the machine.
A level scoop of ground coffee can vary by a third, depending on grind size, roast level and how it settled in the bag. Dark roasts are less dense than light ones, so the same scoop is measurably less coffee. Fine grounds pack; coarse ones don't.
That swing is far bigger than the difference between 1:15 and 1:17 — which means if you're scooping, you aren't really choosing a ratio at all.

The arithmetic
A brew ratio of 1:16 means one gram of coffee for every sixteen grams of water.
16 fl oz of water × 29.5735 ml per fl oz = 473.2 g of water
473.2 ÷ 16 = 29.6 g of coffee
That's it. The water converts using the exact definition of a US fluid ounce, and grams and millilitres of water are the same number — one millilitre of water weighs one gram. True for water, and for nothing else in your kitchen.
Where to start, and how to move
1:16. Almost every brewing guide puts the usable range between 1:15 and 1:17, and 1:16 sits in the middle.
Brew it twice so you know what it tastes like. Then move in half steps:
- Thin, watery, sour finish → more coffee (1:15)
- Heavy, bitter, drying → less coffee (1:17)

Change one thing at a time. If you adjust the ratio and the grind together and it improves, you've learned nothing about which one did it.
Check your carafe before you trust any of this
Here's the one that catches more people than every ratio question combined.
The "cup" on a drip coffee maker is very often 5 fluid ounces, not 8. It's a leftover convention and it isn't standardised between manufacturers. A "12-cup" machine may hold 60 ounces rather than 96 — a 36-ounce difference that will throw your brew off by far more than any deliberate adjustment.
Fill yours to the top mark once, pour it into a measuring jug, and write the real number down. It's a two-minute job you do once.
Ratio vs grind — which do you change?
They fix different faults, and confusing them is why people go round in circles.
- Ratio controls strength — how much coffee is in the water.
- Grind controls extraction — how much flavour comes out of that coffee.
If it's weak and sour together, that's under-extraction: grind finer before touching the ratio. If it's harsh and bitter together, that's over-extraction: grind coarser.
Only when it tastes right but simply too strong or too weak is the ratio the thing to move.
What you pour out is less than what you put in
The grounds keep roughly twice their own weight in water, and it never comes back.
So 473 g of water through 29.6 g of coffee doesn't give you 473 g in the pot. The tool doesn't model that, because how much is retained shifts with grind, method and how hard the bed is pressed. If you need an exact amount — filling a flask, serving a set number of cups — brew a couple of ounces more than the arithmetic says.
Before the ratio, the beans
No ratio rescues stale coffee. Beans are at their best from about three days to three weeks after roasting.
Supermarket bags frequently carry a best-before date rather than a roast date, which tells you nothing useful — a best-before twelve months out could have been roasted at any point. If your coffee is dull no matter what you do, the answer isn't in the arithmetic.
Print the dialling-in sheet, change one variable per brew and write down what happened. Three or four rows is usually all it takes.
