Boneless takes LONGER
23-30 min/lb bone-in against 39-43 boneless for the same rib roast — about an hour at 4 lb. Boning and rolling turns a joint with a heat-conducting bone through the middle into a solid cylinder. The bone is a route in, not insulation.
Minutes per pound falls as the roast grows
Heat enters through the surface and must reach the centre; doubling the weight does not double that distance. A 4-6 lb rib roast is 26-32 min/lb for rare, a 6-8 lb one 23-25. Never carry a rate far outside the cut's normal weight range.
The clock plans, the thermometer decides
A 4 lb rib roast has a 28-minute window between the low and high published estimate. That is the honest measure of what a clock can tell you about a joint whose shape, starting temperature and oven it knows nothing about.
