Roasting time depends on the shape of the meat, its starting temperature, whether it has a bone through it, how accurate your oven is and how often the door opens. The figures come from Clemson Extension's holiday roasting chart, all at a 325F oven. Use them to decide when to start; use a thermometer to decide when to stop. ⚠️ THE SAFE TEMPERATURES ARE NOT NEGOTIABLE, and they are what this tool is really for. Per the USDA and FDA chart: beef, pork, veal and lamb roasts are 145F WITH A 3-MINUTE REST. Fully cooked ham being reheated is 140F. Game such as venison is 165F. Ground meat of any kind is 160F, which is why a rolled joint made from minced meat is a different question entirely. Measure in the THICKEST part, away from bone - bone conducts heat and will read high. ⚠️ BONELESS TAKES LONGER PER POUND THAN BONE-IN. This surprises nearly everyone, and it is in the chart in black and white: a bone-in rib roast is 23-30 minutes per pound, and the boneless version of the same joint is 39-43. At 4 lb that is about an hour of difference. The reason is that boning and rolling turns a joint with a heat-conducting bone running through it into a solid, uniform cylinder, and heat has to travel all the way from the surface to the middle through meat. The bone is not insulation - it is a route in. ⚠️ MINUTES PER POUND FALLS AS THE ROAST GETS BIGGER. A flat per-pound rule is wrong in a specific and predictable direction, because heat enters through the SURFACE and has to reach the CENTRE. Doubling the weight of a roast does not double the distance to its middle. Michigan State's chart shows it directly: a 4-6 lb rib roast is 26-32 minutes per pound for rare, while a 6-8 lb roast of the same cut is 23-25. The published ranges here already account for it within each cut's normal weight range - which is exactly why you should not extrapolate one far outside it. THE ARITHMETIC: weight x minutes per pound, for the cut you chose. The tool also reports how WIDE that window is, because a 28-minute spread on a 4 lb rib roast is the honest measure of how much a clock can tell you. START CHECKING AT THREE-QUARTERS of the low estimate. An oven that runs hot, a small joint or one that went in closer to room temperature will all arrive early, and the only way to find out is to look. Opening the door costs you a few minutes; missing the target costs you the roast. TENDERLOIN IS THE EXCEPTION THAT PROVES THE RULE, and it is deliberately not in the list. The chart gives beef tenderloin as a TOTAL time - 45 to 60 minutes for a whole 4-6 lb one - not as a rate per pound, because a tenderloin is long and thin. Its weight tells you almost nothing about how long heat takes to reach its centre; its THICKNESS does. Any cut that is much longer than it is thick behaves the same way. STUFFED CHANGES IT AGAIN. Stuffing adds 15-30 minutes and the centre of the stuffing must itself reach 165F. A fully cooked ham is being reheated to 140F, not cooked to a safe minimum, so there is no required rest attached to it. Resting any roast still improves how it carves and how much juice stays in it; that is a cooking reason rather than a safety one.
- Why is beef tenderloin not in the list?
- Because it cannot honestly be expressed as minutes per pound, and including it would have quietly broken the model. The chart gives whole beef tenderloin as a TOTAL time - 45 to 60 minutes for a 4-6 lb one - because a tenderloin is long and thin. Its weight tells you very little about how long heat takes to reach the centre; its thickness tells you almost everything. The same is true of any cut much longer than it is thick, and of a flattened or butterflied joint.
- When should I start checking it?
- At about three-quarters of the low estimate, which the calculator shows directly. A small joint, an oven that runs hot, or meat that went in closer to room temperature than fridge temperature will all arrive early - and the only way to discover that is to look. Opening the oven door costs you a few minutes of recovery; missing the target by twenty minutes costs you the roast. Check early, then check often as you close in.
- What about stuffing?
- Stuffing adds roughly 15 to 30 minutes, and the centre of the stuffing must itself reach 165F - it is sitting in the coolest part of the joint and soaking up raw juices, so it is the last thing to become safe, not the first.
