How this is calculated
The multiplier is the servings you want divided by the servings the recipe makes. It applies to every ingredient in the list, and it is the only number you actually need - the rest of this tool exists because the answer it gives you is often unmeasurable. The ingredient amount is converted to cups first, using the US customary definitions: 1 cup is 16 tablespoons and 1 tablespoon is 3 teaspoons, so 1 cup is 48 teaspoons. These are exact by definition, not approximations. Note that a US cup is 8 fluid ounces - a UK or metric cup is a different size, so a recipe written in those units will not scale correctly through this tool. The cup-and-tablespoon breakdown is worked out in whole tablespoons FIRST and then split, rather than taking the whole cups off and converting the remainder. Doing it the other way round lets the leftover round up to a full 16 tablespoons and display something like '0 cups plus 16 tablespoons' instead of '1 cup'. Everything here is a conversion of VOLUME, not weight. Scaling 1.5 cups of flour gives you 1.5 cups of flour; it does not tell you what that weighs, because that depends on the ingredient and on how tightly it is packed. Baking by weight is more reliable than baking by volume for exactly that reason. The arithmetic is exact, but a recipe is not arithmetic - see the FAQ for what does not scale linearly. Pan size, cooking time and anything with a raising agent all need judgement the multiplier cannot supply.
Common questions
- What does NOT scale linearly?
- Several things, and this is where doubled recipes go wrong. Raising agents - baking powder and soda - scale to roughly three quarters of the multiplier once you go past double, or the result tastes soapy and collapses. Salt and strong spices are worth adding at about three quarters and adjusting to taste. Alcohol and extracts intensify rather than double. Cooking time never scales at all. The multiplier is exactly right for flour, sugar, liquid, fat and eggs, and a starting point for everything else.
- How do I handle a scaled egg?
- Beat a whole egg, weigh or measure it, and use the fraction you need - a large egg is roughly 3 tablespoons out of the shell, so half an egg is about 1.5 tablespoons. It is worth the trouble in baking, where an extra half egg noticeably changes the texture. In something forgiving, round to a whole egg and accept it.
- Does the cooking time scale too?
- No, and this is the most common way a scaled recipe fails. Time depends on the DEPTH of the food and the pan, not on the quantity. A doubled cake in the same tin is deeper and takes considerably longer at a lower temperature; the same batter in two tins takes almost the original time. Doubled soup in a wider pot may even be quicker. Scale the ingredients here and judge the time by the food.
- What about the pan size?
- Match the AREA, not the dimensions. Doubling a recipe in a 9-inch round tin does not mean using an 18-inch one - that has four times the area. Two 9-inch tins, or one 13x9, is roughly double. Getting this wrong is what produces a raw middle and a burnt edge.
- Why does it show cups AND tablespoons?
- Because 1.125 cups is a correct answer that no one can measure. Nobody owns a one-eighth cup. Broken into 1 cup plus 2 tablespoons it becomes something you can do with the equipment already in the drawer, which is the entire point of the tool.
- Are these US cups?
- Yes - US customary throughout: 1 cup is 8 fluid ounces, 16 tablespoons, 48 teaspoons. A UK cup and a metric cup are both slightly larger, so a recipe written in those units will not come through this tool correctly. If your recipe is in grams, scale by the multiplier directly and skip the conversion boxes.
