Six cooking tools — why a cup has no single weight, why boning a roast makes it slower, and the plate-to-shop rule that breaks catering estimates.

Cooking for more people than usual is where recipes stop working. Quantities scale into amounts you cannot measure, timings do not scale at all, and the shopping list is not the amount that reaches the plate.

Six tools, roughly in the order a big meal comes together.

Quantities: a cup is not a unit of weight

The Cups to Grams Converter carries the single most useful fact in home baking: a cup of flour is 120 g and a cup of honey is 336 g. There is no single conversion — the ingredient IS the conversion.

Nearly three times the weight in the same cup. Any "cups to grams" chart with one number on it is describing one ingredient and quietly mislabelling the rest.

This is also why baking recipes in cups produce inconsistent results between people. How you fill the cup — scooped, spooned, levelled, tapped — changes the weight substantially, and flour is the worst offender. Weighing removes the whole problem.

Scaling: get back amounts you can measure

Coffee: weigh it

A scoop measures volume, and coffee volume varies with grind size, roast and how the beans settle. Same scoop, different amount of coffee, different cup. Weighing is the entire fix.

Roasts: time is the plan, temperature is the answer

The Roast Cooking Time Calculator carries a genuinely counter-intuitive fact: boning and rolling a rib roast makes it take LONGER per pound, not shorter — 39–43 min/lb against 23–30.

The instinct is that removing the bone makes it cook faster. A rolled joint is denser and thicker through the middle, so heat takes longer to reach the centre, and the per-pound figure goes up substantially.

And the rule that covers everything here: time is the plan; the thermometer is the answer. Use the estimate to schedule the day. Use a thermometer to decide when it is done.

Turkey: the chart, not a flat rate

The Turkey Cooking Time Calculator uses the USDA chart rather than a flat minutes-per-pound rule — which under-cooks a small bird and over-cooks a 24 lb one by a full hour.

Cooking time does not scale linearly with weight, because volume grows faster than surface area. A single per-pound figure can only be right at one weight, and it is wrong in opposite directions either side of it.

Catering: six ounces on the plate is eight at the shop

The Party Food & Drink Calculator carries the rule that breaks most catering estimates: six ounces on the plate is eight ounces at the shop.

Two things do it. Cooking loss — meat loses weight to rendering and evaporation. And offering a second main dish, which does not halve the amount of each; people take some of both, so total consumption rises.

Estimate at the shop weight, not the plate weight.
