These figures are the USDA's approximate roasting times for a whole turkey at a 325°F oven temperature, taken from their published timetable rather than derived from a per-pound rule. THE USDA CHART, unstuffed then stuffed: 8 to 12 lb - 2¾ to 3 hours / 3 to 3½ 12 to 14 lb - 3 to 3¾ / 3½ to 4 14 to 18 lb - 3¾ to 4¼ / 4 to 4¼ 18 to 20 lb - 4¼ to 4½ / 4¼ to 4¾ 20 to 24 lb - 4½ to 5 / 4¾ to 5¼ ⚠️ 165°F IS THE ANSWER. THE CLOCK IS NOT. The USDA's own wording is that these times are approximate and should always be used together with a properly placed food thermometer. A whole turkey is safe at a minimum internal temperature of 165°F throughout, checked in the thickest part of the breast, the thickest part of the thigh, and the wing joint. Use the time to plan your day; use the thermometer to decide when to take it out. ⚠️ A FLAT MINUTES-PER-POUND RULE DOES NOT MATCH THIS CHART. The widely repeated '15 minutes per pound' is right for a mid-sized bird and wrong at both ends. Work the USDA brackets back into a rate and it FALLS from about 20.6 minutes per pound on an 8-pound bird to about 11.3 on a 24-pound one. That is not sloppiness in the chart - cooking time is governed by how long heat takes to reach the centre, and that does not scale linearly with weight. Doubling the weight does not double the time. Compared against the USDA brackets, the rule finishes EARLY on a small bird and LATE on a large one. At 8 pounds it comes in 45 minutes short of the USDA minimum. Through the middle of the range it lands inside the bracket, which is why it has survived. At 22 pounds it runs an hour past the top of the bracket, and at 24 pounds an hour and a half. Finishing early on the small bird is the direction that matters, and it is the one nobody expects - the rule is usually blamed for drying out large birds, which it also does, but the unsafe end is the small one. ⚠️ THE USDA RECOMMENDS NOT STUFFING THE BIRD. Common questions

Why a range instead of one time?
Because that is how the USDA publishes it, and the honesty is the point. Ovens differ, birds differ in shape as well as weight, and how cold the bird was when it went in changes everything. A single number would imply a precision that does not exist. Use the bottom of the range as the moment to start checking with a thermometer, not the top as the moment to take it out.
Is 15 minutes per pound wrong?
It is right in the middle and wrong at both ends - and one of those ends is the opposite of what people assume. What if the turkey is not fully thawed?
Then none of these times apply. The USDA chart assumes a bird that is completely thawed and starting at refrigerator temperature. A partly frozen bird cooks unevenly, takes substantially longer, and gives you a thermometer reading you cannot trust. Fridge thawing takes roughly 24 hours per 4 to 5 pounds, which is why a large bird needs to come out of the freezer several days ahead - this calculator shows that figure for exactly that reason.
Do I need to rest it?
Yes - let the bird stand about 20 minutes before removing any stuffing and carving. It makes carving substantially easier and lets the juices settle. It also matters for safety on a stuffed bird, since the stuffing continues to hold heat. Plan the 20 minutes into your timings rather than discovering them while everything else goes cold; it is one of the easiest parts of the day to get wrong.
