The number that matters is 145°F, measured with a thermometer in the thickest part, away from the bone — plus a 3-minute rest.

Boneless takes longer. Genuinely.

This is the one that surprises people, and it's sitting in the published chart in plain sight:

At 4 lb that's 1h32m against 2h36m — about an hour of difference, for the same cut of meat at the same weight in the same oven.

Almost everyone guesses the other way, on the reasonable-sounding theory that a bone is dead weight you're paying to heat up.

The bone is a route in, not insulation. Bone conducts heat into the middle of the joint. Take it out, roll what's left into a tight cylinder, and now every calorie has to travel from the surface through solid meat to reach the centre.

The same pattern shows up in pork loin: bone-in 20–25 min/lb, boneless 23–33.

So if the butcher offers to bone and roll it for you — say yes if you want easy carving, but add an hour to your plan.

Minutes per pound falls as the roast gets bigger

A flat per-pound rule isn't just imprecise. It's wrong in a specific direction, and knowing which direction is the useful part.

Heat enters through the surface and has to reach the centre. Doubling a roast's weight doesn't double the distance to its middle — a roast twice as heavy is only about 1.26 times as far through.

So bigger roasts need fewer minutes per pound. Michigan State's chart shows it directly for one cut:

  • 4–6 lb rib roast, rare: 26–32 min/lb
  • 6–8 lb rib roast, rare: 23–25 min/lb

Which means the real danger with a flat rule is at the small end: a rate borrowed from a big joint will under-cook a small one, and under-cooked is the unsafe direction.

The published ranges in the calculator already account for this within each cut's normal weight range. That's exactly why you shouldn't take a rate and stretch it far outside that range.

The estimate is wide, and that's the honest part

The calculator reports how wide the estimate is — 28 minutes for that 4 lb roast, 56 minutes for an 8 lb one.

That spread isn't the chart being vague. It's an honest measure of what a clock can tell you about a piece of meat when it knows nothing about:

  • the shape of the joint (long and thin vs. compact)
  • its starting temperature
  • whether your oven actually runs at 325°F
  • how often the door opens

Start checking at three-quarters of the low estimate. A small joint, a hot oven, or meat that went in closer to room temperature will all arrive early — and the only way to find out is to look. Opening the door costs a few minutes of recovery. Missing by twenty minutes costs you the roast.

The temperatures, which aren't negotiable

From the USDA/FDA chart:

Two things worth pulling out of that table.

Ground meat is 160°F, not 145°F. Whole-muscle meat carries bacteria on its surface, which is why searing the outside of a steak is enough. Mincing distributes that surface throughout, so the whole thing has to get there. A rolled joint made from minced meat is not a roast for these purposes.

Measure away from the bone. Bone conducts heat and reads high — the same property that makes bone-in roasts cook faster will lie to your thermometer if you rest the probe against it.

Why the rest time shows zero for ham

Because it genuinely is zero, and hiding that would be worse.

The 3-minute rest is part of the 145°F rule — the temperature and the hold together are what make that figure safe for fresh beef, pork, veal and lamb.

A fully cooked ham is being reheated to 140°F, not cooked to a safe minimum. There's no required rest attached to it.

Resting it anyway is still a good idea — it carves better and keeps more juice. But that's a cooking reason, not a safety one, and the two are worth keeping apart.

Tenderloin isn't in the list, on purpose

Beef tenderloin is given in the chart as a total time — 45 to 60 minutes for a whole 4–6 lb one — not as a rate per pound.

Because a tenderloin is long and thin. Its weight tells you almost nothing about how long heat takes to reach its centre; its thickness tells you nearly everything.

Putting it into a per-pound calculator would have produced a confident wrong answer, so it isn't there. The same caution applies to anything much longer than it is thick, and to any joint you've butterflied flat.

That's the general lesson hiding inside this whole page: per-pound rules are a proxy for thickness, and they only work while the shape stays typical.

Before you start

  • Test the thermometer in boiling water — 212°F at sea level. An instant-read that's 8° out is worse than none
  • Preheat properly, not just until the beep
  • Set the timer for three-quarters of the low estimate
  • Probe the thickest part, away from bone
  • Rest it somewhere that isn't a cold worktop
  • Refrigerate leftovers within 2 hours
